Whether you’re in your backyard or out in the bush on a great outdoors expedition, a braai is a welcoming sight, smell, and taste. So here’s the perfect recipe for pork loin chops to try out the next time you light up those coals.
What you’ll need:
- 4 bone-in pork rib chops (about 3cm thick)
- A simple yet effective spice blend. Think salt, pepper, oregano and rosemary, but introduce a special something.
- 2 lemons
- 2 tots cup honey
- 4 chopped and crushed cloves of garlic
- 2 tots olive oil

Method:
- Take the pork chops out of the cooler box and score the fat along the edges. This helps them stay flat when they are on the braai.
- Use your special spices to season the pork chops. Get in every nook and cranny.
- Leave the chops to rest for a few hours in the cooler box, Make sure to use the vacuum hand pump!
- Mix the lemon juice, honey, olive oil, and garlic together and baste the chops.
- Braai the chops over medium heat coals, turning them frequently and placing them on all sides of the pork chop so it gets enough time on the coals.
- Check the internal temperature of the meat. It should be around 70°C to be tender and juicy, yet fully cooked.
- Let the chops rest for 5-10 minutes and serve with extra lemon wedges.
